Cranberry Fluff

December 17, 2014

I’m very excited to be sharing this recipe with you. It was introduced to me just a few years ago by a family friend (it’s a longstanding Thanksgiving tradition at his family’s table), and I loved it the first time I tried it. I think you will too, and find many more uses for it besides just at Thanksgiving time, so be sure to whip up a batch of cranberry fluff. Continue reading

Crustless Pumpkin Pie

December 14, 2014

This post is a little late in coming, but I figure that pumpkin-anything is good for far longer than just Thanksgiving. I see no reason why the good old pumpkin pie should be relegated to just that one holiday. And speaking of which, what’s the best part of a pumpkin pie? The filling of course – so skip the crust and just go for the best part with my crustless pumpkin pie recipe. Let’s live a little! Continue reading

Sausage and Apple Spaghetti Squash Pasta

December 10, 2014

It’s been a while since I’ve written a post that’s paleo-friendly and low carb, and I didn’t do it on purpose, but it just sort of happened that way. I figure, with the holidays (and all their temptations) upon us, who couldn’t benefit from a great, filling meal that’s a little more figure-friendly. Once you dig into my chicken sausage and apple spaghetti squash pasta, you won’t think it’s low-calorie, it tastes so indulgent. Continue reading

Lightened Up Bread Pudding

December 7, 2014

Happy holidays everyone!

I, as I imagine you are too, am knee-deep getting ready for the holidays. Baking, shopping, wrapping and decorating – it’s all happening at once, just like always. In between this craziness though, my sweet tooth never wanes, and I’m always on the hunt for new desserts that satisfy that and don’t expand my waistline.

If you’re anything like me, and you like the ooey, gooey, goodness of bread pudding, you’ll love this lightened up version of bread pudding I whipped up recently.

Asian Pork and Noodle Bowls

December 3, 2014

It’s hard to believe we’re already into December! At least for me it is. I have no holiday shopping done, no lists made, no nothing, but I’m excited nonetheless – cookies, carols, trees and decorations, more time with my family and the general good cheer and excitement around the holidays is always invigorating.

But because all of this is happening, healthy eating, cooking at home and the like goes right out the window. Never fear, I have some really quick and easy recipes you can whip together to eat well and save time. Like my latest recipe: Asian pork and noodle bowls. Continue reading

Ham and Pineapple Pizza

November 29, 2014

Did you know the biggest day for delivery pizza orders is the day before Thanksgiving? Yep. Think about it: relatives in town, cooking like mad for Thanksgiving dinner the next day, need something quick and easy that everyone will like – what comes to mind? Pizza, that’s what.

Thanksgiving might be over now, but that doesn’t mean pizza’s any less appealing. Instead of picking up the phone or reheating some more turkey leftovers, make your own easy, healthier ham and pineapple pizza using my recipe below. Continue reading

Thai Chicken and Udon Noodles in Peanut Sauce

November 19, 2014

I don’t know about you, but as I was growing up, I was forever cutting out recipes from newspapers, magazines and anywhere else I could find them, telling myself someday I’d get around to making the dishes. And if you’re anything like me, so many of them sat in folders and binders and dusty corners never actually getting made. This past week, I unearthed one of those old recipes, and it turned to be as good as I’d imagined. Try out my Thai chicken and udon noodles in peanut sauce and tell me if I’m lying.
