If you celebrate Easter, happy pre-Easter, as well! I don’t know about you, but I loved Easter growing up. The egg hunts, the chocolates and candies, my aunt’s traditional “find the dollar” hunt. I’ll fill you in on it later in the post. But for now, what you’ve been waiting for; my most recent recipe creation: a one pot meal of Creole chicken and pasta. Continue reading →
Hey everyone! Can you believe it’s April already? I certainly can’t. Time’s just flying and I still haven’t made much headway in the wedding planning: no date picked, no location picked, nothing. *Sigh* Eventually we’ll get it figured out, right? Right.
So, now I can focus on something I can do something about right now. More one pot dishes – and this one in particular is super easy, with a few simple tricks like premade meatballs. Are you ready for it? It’s orzo pasta and meatball soup. Continue reading →
I don’t think there’s anything much more perfect than steak. As much as I love steak though, sometimes I just don’t feel up to tackling a big, burly strip steak or porterhouse by myself – it puts me into a food coma. However, I’ve found a much lighter way to have my steak and not fall asleep immediately afterwards too. A little less steak, the addition of a tortilla wrap, some good greens and you’ve got yourself a perfect recipe. Rib eye steak wraps, coming right up!
Today’s post is going to be short, sweet and to the point, just like the recipe itself. This is one of those recipes you can throw together when you’re short on time, ingredients and the will power to put much effort into dinner. Another bonus is that it’s pretty light and won’t leave you feeling lethargic afterwards. Winning all around. Try my new shrimp wraps recipe the next time you need a quick go-to lunch or dinner.
I hope you’re enjoying the holidays and the festive atmosphere everyone seems to have this time of year. If it’s cold outside, at least there seems to be warm smiles wherever you turn. Anyway, with New Years’ Eve fast approaching I thought a good recipe to share would be my mini apple pie recipe.
I, as I imagine you are too, am knee-deep getting ready for the holidays. Baking, shopping, wrapping and decorating – it’s all happening at once, just like always. In between this craziness though, my sweet tooth never wanes, and I’m always on the hunt for new desserts that satisfy that and don’t expand my waistline.
If you’re anything like me, and you like the ooey, gooey, goodness of bread pudding, you’ll love this lightened up version of bread pudding I whipped up recently.
Did you know the biggest day for delivery pizza orders is the day before Thanksgiving? Yep. Think about it: relatives in town, cooking like mad for Thanksgiving dinner the next day, need something quick and easy that everyone will like – what comes to mind? Pizza, that’s what.
Thanksgiving might be over now, but that doesn’t mean pizza’s any less appealing. Instead of picking up the phone or reheating some more turkey leftovers, make your own easy, healthier ham and pineapple pizza using my recipe below. Continue reading →
I know I’ve been remiss not posting for the past couple of weeks, but hopefully this latest batch of recipes will make up for it. To continue with the fall theme of many of my recent posts, I present to you another squash-based recipe. Zucchini bread muffins! Continue reading →
Do you ever have those days when you’re totally unprepared when dinner time rolls around? I find that unless I plan out the week’s meals in advance over the weekend it’s bound to happen to me. It happened again last night, but I had a semi-plan. I had a random pork tenderloin in the fridge… Here’s what I did with it.
