Even though I’ve been on a health kick lately, that’s no reason to sacrifice taste. All it means is that I need to get more creative with the ingredients I’m using in the kitchen and turn to other countries for some spice inspiration. My next dish is a new twist on the classic Moroccan tagine dishes cooked in earthenware pots and full of delicious spices and curries. I don’t know about you, but for me, the new year meant some new resolutions, one of which is eating healthier and getting in better shape. I’ll be totally honest, while I couldn’t be happier having a boyfriend as great as Sean, relationship bliss has come with one little drawback: weight gain. It’s not his fault, I’m the one putting the food in my mouth, after all, but dinners out, dinners in and baking goodies for his enjoyment have not left me untouched. I can’t believe we’re just days away now – the month’s gone by so quickly. Are you ready for the holidays? Got all your shopping done, all your presents wrapped and all your dinners planned? Yeah, me neither. But I do have a great new recipe that’s easy and very decadent: chicken parmesan.
It’s been a while since I’ve written a post that’s paleo-friendly and low carb, and I didn’t do it on purpose, but it just sort of happened that way. I figure, with the holidays (and all their temptations) upon us, who couldn’t benefit from a great, filling meal that’s a little more figure-friendly. I don’t know about you, but as I was growing up, I was forever cutting out recipes from newspapers, magazines and anywhere else I could find them, telling myself someday I’d get around to making the dishes. And if you’re anything like me, so many of them sat in folders and binders and dusty corners never actually getting made. This past week, I unearthed one of those old recipes, and it turned to be as good as I’d imagined. Try out my Thai chicken and udon noodles in peanut sauce and tell me if I’m lying.
There’s not much better than coming home from a long day at work, walking in the door and having the house smell amazing because dinner’s ready. At least, that’s my personal opinion, which is why slow cookers (crock pots) are God’s 5- to 7-quart gifts to man. Continue reading →
