I know, I know, it’s been too long since my last post, and for that, I apologize. This past month has been absolutely nuts. To sum it up in a nutshell, let me just say, I hate moving. It is anything but fun for me, but lucky for you, it’s done and now we can move on to other things, like this awesome one pot meal of spicy sausage and rice, some might even call it jambalaya.
Do you ever have those days where your brain just seems to be somewhere else? I had one of those recently while I was going to the grocery store. Just a day or two before, Sean and I had decided we were going to try making a big batch of healthy baked ziti for the week, but somehow I’d managed to leave off half the necessary ingredients for the ziti from the grocery list. A senior moment if ever I’ve had one. So the next day after work, I made a second trip to the grocery store for just three ingredients (few yes, but unfortunately very necessary), and I’m glad I did; our healthy baked ziti turned out great.
Are you a fan of Mexican food but not the heavy calorie counts that come with it? Me too. Fajitas, enchiladas, tacos, chicken tortilla soup – it’s all good in my book. However, with the amount of cheese, oil and butter a lot of these dishes typically call for I don’t have them too often, however, I recently came across a healthier recipes for beef enchiladas that I tweaked some more, and I think you’re gonna be a fan. You know what an odd, but great food combination is? Apples and pork. You wouldn’t think that the sweetness of apples (or apple juice) would go well with the mild taste of pork, but it does, and trust me, this recipe for pork and apple cider with potatoes is going to knock your socks off.
This is a dish I’m particularly proud of: chicken ramen made at home. And no, not the kind that comes in the cup that you just add hot water to – I’m talking about the real deal, cooked for hours type of ramen. Except so much easier (not to mention less salty). Ready to make it yourself?

Hey everyone! Can you believe it’s April already? I certainly can’t. Time’s just flying and I still haven’t made much headway in the wedding planning: no date picked, no location picked, nothing. *Sigh* Eventually we’ll get it figured out, right? Right.
