Rib Eye Steak Wraps

February 11, 2015

Hi friends!

I don’t think there’s anything much more perfect than steak. As much as I love steak though, sometimes I just don’t feel up to tackling a big, burly strip steak or porterhouse by myself – it puts me into a food coma. However, I’ve found a much lighter way to have my steak and not fall asleep immediately afterwards too. A little less steak, the addition of a tortilla wrap, some good greens and you’ve got yourself a perfect recipe. Rib eye steak wraps, coming right up!

Moroccan Chicken Tagine with Chickpeas

February 8, 2015

Hey everyone, I hope you’re enjoying the weekend as much as I am!

Even though I’ve been on a health kick lately, that’s no reason to sacrifice taste. All it means is that I need to get more creative with the ingredients I’m using in the kitchen and turn to other countries for some spice inspiration. My next dish is a new twist on the classic Moroccan tagine dishes cooked in earthenware pots and full of delicious spices and curries. But don’t fear if you don’t have an actual tagine – my recipe makes good use of a crock pot instead.  Continue reading

Shrimp Wraps

February 4, 2015,

Hey everyone, happy Wednesday!

Today’s post is going to be short, sweet and to the point, just like the recipe itself. This is one of those recipes you can throw together when you’re short on time, ingredients and the will power to put much effort into dinner. Another bonus is that it’s pretty light and won’t leave you feeling lethargic afterwards. Winning all around. Try my new shrimp wraps recipe the next time you need a quick go-to lunch or dinner.

Healthier Meatloaf

February 1, 2015

Hey everyone! Happy Sunday and happy Superbowl (if you’re a fan of that). I don’t know the first thing about football, but I love getting together with my friends, eating some good food and watching the commercials.

Today’s blog post is actually sparked by a company called ALOHA – a place to say hello to good health and happiness. They inspired me to share some tips I have for staying healthy during the winter time months, and especially with all the cold and flu bugs going around, I was more than happy to list some of my favorite ways to incorporate more super foods into my diet to stay strong and healthy year round. So I’m sharing a super healthy version of the classic meatloaf guaranteed to warm you up and keeping you going strong. Continue reading

Baked Lemon Thyme Chicken

January 21, 2015

Howdy everyone!

I don’t know about you, but for me, the new year meant some new resolutions, one of which is eating healthier and getting in better shape. I’ll be totally honest, while I couldn’t be happier having a boyfriend as great as Sean, relationship bliss has come with one little drawback: weight gain. It’s not his fault, I’m the one putting the food in my mouth, after all, but dinners out, dinners in and baking goodies for his enjoyment have not left me untouched. Hence, my decision to get serious about taking the weight off this year. Continue reading

Sweet and Sour Sloppy Joes

January 11, 2015

Good Sunday to you! I’m still having trouble writing 2015 into the date consistently, but then I always do. I hope your new year’s gotten off to a good start!

This recipe is one that I’m really excited to share with you – it started off as a run-of-the-mill sloppy joe recipe, but holy cow, did it turn into something more. It’s by far one of Sean’s favorites now and I think we’ll be making it many more times in the future.

White Chicken Chili

December 26, 2014

Hello all!

Happy day after Christmas to you! I hope you had a wonderful day yesterday – I certainly did. There’s nothing much better than spending the day with my family and my boyfriend (yep, he came to spend Christmas with us this year) all at the same time. And I’ll bet you ate as indulgently as I did too – which is why my latest recipe for white chicken chili is the perfect way to get back to healthier eating. Continue reading

Happy almost Christmas, my friends!

I can’t believe we’re just days away now – the month’s gone by so quickly. Are you ready for the holidays? Got all your shopping done, all your presents wrapped and all your dinners planned? Yeah, me neither. But I do have a great new recipe that’s easy and very decadent: chicken parmesan.
