Lemony Pork Stir-Fry

September 27, 2014

Do you ever have those weeks where you just can’t get to the grocery store to save your life so you can eat like a normal human? I had that this week. But instead of giving up and ordering take-out last night, I whipped up the quickest stir-fry ever. Continue reading

Chicken and Sweet Pepper Fettuccine

September 20, 2014

It’s officially true. Fall is setting in. For many of you, this may be exciting: cold weather, sweaters, boots, jeans and leaves changing colors. For me, it means winter is just around the corner. Boo…

Harsh midwestern winters figured prominently in my decision to move south (or west) for college when the time came. Then once I moved to Atlanta, my blood thinned even more and going anywhere further north  seems almost out of the question entirely. It would have to be quite an opportunity… but that’s for another post.

The point I’m trying to get to is food. It’s one of the highlights of fall and winter. Specifically, heartier, more stick-to-your-ribs types of food. Like my chicken and sweet pepper fettuccine.

Asian Glazed Chicken

September 17, 2014

In case you haven’t noticed, I love my mom. A lot. I’ll be totally honest here, she’s my best friend. We never went through that awkward mother-daughter phase where I rebelled and we fought and then made up when I finally got old enough that I realized she did know what she was talking about. We just didn’t – we got along and stayed getting along all the time that I was growing up. Truth.

Bottom line: when she says something or passes something along to me, I usually listen or take note. Not always, but mostly. Because it’s usually good advice. Recently she passed along this recipe, and it didn’t disappoint. Continue reading

Buttermilk Oven-Fried Chicken

August 24, 2014

Fried chicken is as American as apple pie. Unfortunately, the traditional method of cooking it is also fairly hazardous to your health. Between pressure cookers, frying oil and big chunks of breaded chicken (thighs, wings and all), fried chicken has never been mistaken for ‘health food.’ Today, that will change, with this post. Chicken Salad Rice Bowls

August 17, 2014

Sometimes you just get tired of plain salads, right? I know I do. So recently, I was looking for a way to spice them up from the usual while still keeping them healthy. I’ve been doing more cardio lately with P90X, and it was pretty obvious I needed some more carbs in my diet, so I decided to make a healthy try adding a mix some rice to my salad – a sort of salad, rice bowl mash up. And you know what? It turned out to be pretty darn tasty!

Chicken Soup

August 14, 2014

Like death and taxes just a few days after we got home from our trip to Trinidad, Sean started coming down with a cold. Poor thing. Summer colds are just the worst, and my boyfriend is someone who gets sick maybe once a year on average. While there wasn’t much I could do for him besides push ibuprofen and liquids while waiting for the cold to run its course, I did also whip up a batch of my mom’s chicken soup.

Balsamic Onion-Smothered Burgers with Feta Cheese

July 31, 2014

I love burgers. Growing up, whenever we would go out to eat, it was a pretty fair guess that my order would be a cheeseburger. A little ketchup, a little mustard, some yellow American cheese and nothing else. Perfection.

The Secret to Perfect Rib Eye Steak

July 27, 2014

I’m going to let you in on a little secret. Cooking a steak to perfection on the grill really isn’t that hard. I know every steak house and expert griller is denying this vehemently right now, but it’s true. Plain and simple. And I’ll tell you how to do it right every time.

Your New Use for Leftover Chicken: Chicken Stir-Fry

July 16, 2014

Last night I didn’t feel like cooking. I just could not even. I also was over salad. Done. Can’t do it. Finito. But I had some leftover chicken breast and I needed a quick idea for it. What did you do you, you ask? Well, I did a big, easy, chicken and veggie stir-fry. It turned out to be just the ticket too.

Ultimate Go-To Salad

July 14, 2014

Hi friends,

I don’t know about you, but during the summer, I feel a lot less inclined to get into a hot kitchen to cook up something in the oven – besides easy things like cookies or my peanut butter banana bread, anyway. Lucky for me, my boyfriend Sean is an expert griller, and even better he enjoys doing it. No lie. My dad’s never been a big fan of the grill aside from a few times during the summer, so I didn’t know what I was really missing until we started dating and Sean introduced me to the beauty of a perfectly grilled rib eye. In fact, we grill at least once a week in warm weather. Which brings me to my post for today: the perfect summer salad to compliment your grilled meat.
