Harsh midwestern winters figured prominently in my decision to move south (or west) for college when the time came. Then once I moved to Atlanta, my blood thinned even more and going anywhere further north  seems almost out of the question entirely. It would have to be quite an opportunity… but that’s for another post.

The point I’m trying to get to is food. It’s one of the highlights of fall and winter. Specifically, heartier, more stick-to-your-ribs types of food. Like my chicken and sweet pepper fettuccine.

Asian Glazed Chicken

In case you haven’t noticed, I love my mom. A lot. I’ll be totally honest here, she’s my best friend. We never went through that awkward mother-daughter phase where I rebelled and we fought and then made up when I finally got old enough that I realized she did know what she was talking about. Chicken Salad Rice Bowls

Sometimes you just get tired of plain salads, right? I know I do. So recently, I was looking for a way to spice them up from the usual while still keeping them healthy. I’ve been doing more cardio lately with P90X, and it was pretty obvious I needed some more carbs in my diet, so I decided to make a healthy try adding a mix some rice to my salad – a sort of salad, rice bowl mash up. And you know what? It turned out to be pretty darn tasty!

Chicken Soup

Like death and taxes just a few days after we got home from our trip to Trinidad, Sean started coming down with a cold. Poor thing. Summer colds are just the worst, and my boyfriend is someone who gets sick maybe once a year on average. Ultimate Go-To Salad

Hi friends,

I don’t know about you, but during the summer, I feel a lot less inclined to get into a hot kitchen to cook up something in the oven – besides easy things like cookies or my peanut butter banana bread, anyway. Lucky for me, my boyfriend Sean is an expert griller, and even better he enjoys doing it. No lie. My dad’s never been a big fan of the grill aside from a few times during the summer, so I didn’t know what I was really missing until we started dating and Sean introduced me to the beauty of a perfectly grilled rib eye. In fact, we grill at least once a week in warm weather. Which brings me to my post for today: the perfect summer salad to compliment your grilled meat.

Thai Red Curry Chicken

Hello everybody!

Today’s recipe comes to you courtesy of my boyfriend Sean.

Actually, it was one of the first things he cooked for me right after we started dating, and to this day whenever we make it together I like to think of that. We’d been going out for just about a month when he invited me over to his house for dinner. My birthday was coming up the following weekend, and in honor of it he was going to cook for me (believe me, I know how lucky I am to have a man who can cook. It’s even better that we enjoying doing it together). I didn’t know what to expect, but I knew he had been following the paleo diet for a while before he met me (my love of baking and sugar served to end that diet in pretty short order), and he made me one of his favorite go-to, hearty recipes. Red chicken curry. And I’ll tell you right now, if the man didn’t already have my heart, he would have had it after that dish. It was delicious, paleo or not!
